Baked Chicken Taquitos


This is actually a more healthy recipe because these are baked, not fried! I like these because they are quick and easy!! You can make these early in the day or night before, cover with foil and pop them in the oven when you have time. For a time saver use rotisserie chicken from the deli.



Here is the list of ingredients:

3 ounces of light cream cheese, softened
1/4 c. salsa, green or red
1 T fresh lime juice
1/2 t. ground cumin
1/2 t. chili powder
1/2 t. onion powder
2 cloves garlic
3 T chopped parsley or cilantro
2 scallions chopped
2 cups shredded cooked chicken
1 c. pepper jack cheese
12 (6 inch) flour tortillas
sea salt
cooking spray

Preheat oven to 425 degrees F.  Line a baking sheet with silpat, parchment or foil sprayed with Pam.  In a large bowl, combine all the ingredients.  Working with a few tortillas at a time, heat them in the microwave until they are soft enough to roll.  Spoon 2-3 Tablespoons of the chicken mixture onto the lower third of tortilla. Roll the tortilla as tightly as you can. Place tortilla seam side down on the baking sheet. Repeat with remaining tortillas until the mixture is gone.  (don't let the tortillas touch each other).  Lightly spray the top of the taquitos with cooking spray and sprinkle lightly with kosher or sea salt (don't skip the salt!)  Bake for 20-25 minutes until  golden brown and crisp.

Serve with salsa, sour cream, guacamole, beans, lettuce, tomatoes or whatever you think sounds good.  I promise you will love these.
