I love dessert, especially cold ones! Cold ones that include chocolate! I don't really like marshmallow anything, but these just have a few mini's and they are frozen, so they are perfect. This is a play on the S'more, but less messy and way better. I used my mini cheesecake pan, but you can use a muffin tin, just be sure to use liners. These are rich and creamy and just Yummy!
Here's what you'll need:
18 graham cracker squares (1 1/2 cups of crumbs)
1/2 c. butter
1/2 c. milk chocolate chips
1/4 c. whipping cream
2 c. mini marshmallows
1 1/2 c. cold milk
1 box ( 3.9 oz) instant chocolate pudding
1 (8 oz) container of Cool Whip, thawed
1/4 c. mini chocolate chips for topping
Crush graham crackers into fine crumbs. Melt butter and add to crackers mixing well to make crust. Evenly divide mixture into all 12 cups saving 1/4 cup to use as a topping if you wish. Press crumbs firmly into the bottom of each cup. Place milk chocolate chips and whipping cream into a small bowl and microwave in 30 second increments, stirring in between until melted and smooth. Spoon chocolate into a zip lock bag, cut off tip and evenly pip chocolate into the center of each cup on top of crust.
Divide marshmallows among cups. Mix cold milk with pudding on medium speed for 2 minutes. Fold in 1/2 of the cool whip container. Spoon filling into a large zip lock bag. Clip a corner and pipe pudding into each cup. Use a knife to smooth the tops level with the top of the pan. Freeze for at least 3 hours.
Remove from pan, top with cool whip and sprinkle with graham cracker and mini chips. Serve right away. Then if you have any left overs, store in a sealed container and freeze until your ready to serve. They are so much better frozen but can be served at room temp. I seriously could eat all of them!
