Beef Stir Fry

Sirloin Stir-fry with Ramen Noodles

About a month ago my husband went to Washington and brought home a beef and a half.  That's A LOT of beef. So I am on the look out for any recipe that uses beef. Stir-fry is always good and doesn't heat up the kitchen. I thought this looked good and it was delicious, plus it used a package of meat! Again, thanks to Whitney for making it look so yummy!



Ingredients you will need:
2 pkgs. beef ramen noodles
2 T. cornstarch
2 C. beef broth divided
1 lb. beef top sirloin steak cut into thin strips
2 T. reduced-sodium soy sauce
2 cans whole baby corn, rinsed and drained
2 C. fresh broccoli cut into bite size pieces
1 C. diced sweet red pepper
1 C. shredded carrots
4 green onions, cut into 1" pieces

Set aside seasoning packets from noodles. Cook noodles according to directions.
Combine cornstarch and 1/4 cup of broth until smooth in a small bowl; set aside.  Stir-fry beef in oil until no longer pink in a large skillet or wok. Add soy sauce; cook for 3-4 minutes or until liquid has evaporated. Remove beef and keep warm.
Add the corn, broccoli, red pepper, carrots, onions and remaining broth to the pan. Sprinkle with contents of seasoning packets. Stir-fry for 5-7 minutes or until vegetables are crisp-tender.
Stir cornstarch mixture and add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain noodles. Add beef and noodles to pan; heat through and serve.

When I made this I kept thinking I should just serve it without the noodles and cook rice, but the noodles were a nice change from rice and tasted so good. I didn't care for the baby corn so I added snow peas.  This was an easy recipe. It makes a lot so its a great dish to serve to a crowd.  Hope you enjoy!
