Taco Salad

This is one of my favorite go to meals when everyone is hungry right NOW! When I was working in Kennewick, Washington for an accounting firm this salad was the hit of the bbq.  Thank you Tom Neal for this recipe.  I have been making this for 26 years and no one ever complains about it unless I've been making it all the time.  This takes no time to throw together, especially when you have helpers. It makes a huge amount but you can cut it down to whatever size you need. 

Here is what you'll need:

1 lb of cooked hamburger with taco seasoning
1 head of iceberg lettuce chopped
1 can of kidney or black beans
1/2 cup of corn
2-3 tomatoes chopped
2 cups of shredded cheddar cheese
1 -2 avocados chopped
1 small onion
 4 cups of crushed Doritos, or about a 12 oz. bag
1- 8 oz bottle of Catalina dressing 

Put all ingredients into a very large bowl and toss with Catalina dressing until well coated.  Serve with olives, salsa, more cheese and sour cream.  Add whatever else you like or omit what you don't like. This doesn't keep very well in the refrigerator, it gets soggy, so don't plan on left overs. Most of the time I don't have any left overs any ways.  Hope you love it!
