Potato soup

This is not really the time of year to be making soup, but maybe you'll have a cooler day and feel like soup! This is one of our favorite winter meals. The hardest part is just all of the chopping and slicing of the veggies, but it's so easy to throw together and it smells as good as it tastes!



Ingredients you will need:

2-3 slices of bacon
2 T butter
1 Onion sliced
2 garlic cloves minced
1/4 c. flour
4 potatoes diced
2 carrots thinly sliced
3 celery ribs sliced
1 1/2 c. chicken stock
3 cups of milk 
1/2 t. red pepper flakes
salt and pepper
green onion sliced
cheese
bacon bits

In a large pan melt butter and stir bacon until cooked. Add all veggies and saute for 5 minutes. Add flour and cook 2 minutes, stirring constantly.  Add chicken stock and milk.  Stir soup to incorporate flour.  Bring to a boil.  Reduce and simmer about 25 minutes.  Break up potatoes with back of spoon.  Add red pepper flakes.  Salt and pepper to taste.  Garnish with green onions, cheese and bacon bits.

Serves 8 - 10.  Really good left over!
